Fencing is an art derived from the gentleman's duel. Dueling was used to settle arguments. Later on in history, people took the same moves used in dueling and turned it into a sport, eventually becoming one of the original sports at the Modern Olympics. No one person invented it.

One could successfully argue that the inventor of fencing was the man who created the sword, as fencing is a sport that is essentially two armed opponents fighting each other.

Fencing wasn't so much invented as it grew out of a long tradition of swords and dueling in Europe. Sabre, the cavalry sword. Foil, the practice dueling sword. Epee, the rapier.
