I'd imagine most people will answer with the era they started watching in. That's when the magic is the thickest and you haven't caught on to the tropes and common occurences—it's all new to you. For me, that's the early- to mid-2000s—and man, do I look back on that time fondly...but with hindsight and later rewatchings, I also know there was some remarkably lame stuff during that time. So, while my nostalgia pick goes to that era, my "unbiased" pick goes to Smackdown! Live just after the brand split in 2016. New camera angles, compelling stories for underused wrestlers and living-legends alike, and most notably, Talking Smack airing after the show to flesh out characters and advance stories. Gosh, it was a joy watching around that time.
