To my understanding rolling suggests moving with the force of the punches to avoid feeling their full weight. I.e. attacked from the left you move back 'n right.
It generally is used in common dialect as a way to stick thru tough times and wait for your opportunity in the future. Just like in boxing if you let you're opponent expend himself and you 'roll with' the punches instead of stepping into their full thrust he'll get tired and you will have a chance to land one.
