There are many variables, wind, water, rigging, crew, size etc. A standard speed would be around 6 to 8 knots
20-30 knots is not unlikely and 55 knots is possible...

Depending on your skill level anywhere between 5 knots and 20 knots. For someone that is just starting i don't recommend over 11 knots.
