20-30 knots is not unlikely and 55 knots is possible...
I learned to sail in a 7-foot long sailboat that regularly achieved 20 knots.
Depending on your skill level anywhere between 5 knots and 20 knots. For someone that is just starting i don't recommend over 11 knots.
10-15 knots in a good gust of wind
Generally, 1-3 knots slower than the available wind.
