Currently, no one can answer this question as the game is currently still under development. The release date for the game in the US is late 2009.
However, many people including myself serious doubt that they would even make that. the problem is that a lot the fighters under Zuffa contract currently have no desire to sign away their image rights to allow the game to use their face/fighting style.
As long as the UFC push their brand, I doubt the game will be release anytime in at least the next year. If this game was just an MMA game with fictional characters we'd see it in the US this year, but we won't see it in OZ since no one here knows/cares about MMA.
Long story short, I wouldn't hold your breath. It's like asking when will Anderson Silvia fight Fedor.
