Earliest records are from the beginning of the 19th century, we can speculate that it started shortly after slaves interacted in Brazil begining in the 16th century, but it's just speculation.

However, modern capoeira either comes from Mestre Bimba (Manuel dos Reis Machado) or Mestre Pastinha (Vincente Ferreira Pastinha).
In the 16th century when the Portuguese brought slaves to Brazil and wouldn't allow them to practice fighting or anything of that matter, so the slaves had to hide their fighting style by acting as if they were dancing.
Capoeira wasnivented in the 1500s by African slaves brought to Brazil. They were not allowed to fight, so they invented capoeira, which is technically a dance, but it's also a game and a fight, so it was a perfect loophole. Modern Capoeira Regional ( pronounced hay-jo-now) was basically invented by Manuel dos Reis Machado. His capoeira name was Mestre Bimba. Capoeira Angola, which is much more like the oiginal form of capoeira was modified by Vincente Ferriera Pastinha, Mestre Pastinha. He helped make it a bit more popular. Both of them were alive from about 1890s- 1970s. I don't know quite as much about Pastinha as I do about Mestre Bimba, and I'm no expert on either, but I 'm in capoeira classes close to where I live and we have to learn about them for my classes.

Also there was a vivid history of capoeira used as a means of rebellion against the Catholicism's grasp on slave trade in the early 1400's by Spain,Austria,England and France. Although capoeira ;band in Brazil it was still practiced by Afro-slaves when they first shipment came to south-america in 1705; learned from the Brazilian founders.

Why did capoeira start?
Two answers: Originally, Capoeira was not started by any individual, it was a practice, which had been adapted from earlier ritualized martial arts, by a group of West-Central African slaves in Brazil, and was quickly morphed by various African, Indigenous, and Portuguese-Catholic influences. Capoeira as it is practiced now is largely descendent from two particular Mestres (Masters) of the art, who were given official sanction to teach in the '30s. Mestre Bimba (Manuel dos Reis Machado) created Capoeira Regional and Mestre Pastinha (Vicente Ferreira Pastinha) coined the term and created Capoeira Angola.
