No, I don't think so. Any fighter who wants to fight in the UFC has to be medically cleared by a certified medical practitioner that he is 100% healthy heading into the fight. With just one kidney nobody can be considered 100% healthy and more importantly fighters need to be at the peak of their health and any weaknesses can be devastating for them. So, no doctor or fighting promotion would allow a fighter with just one kidney to risk their lives in a fight.
