Because the films were not originally created in English. The dialog in most of the films is in Chinese. For the American/British markets they replaced the sound track with English language, and naturally they don't match up. Because those movies probably only cost $5,000 to make. Even adjusting for inflation as to the worth of USD back in the 1970's, that is still cheap as far as making movies are concerned. Even American B-movies of the era usually cost around 20k back then. In modern times, B-movies usually run at around half a million to a million, the most expensive B-movies cost around a million I think, not really sure though. You have to admit they did a pretty good job given such a ridiculously low budget.
