There are 2 schools of thought on that question, the most popular being that it was to simulate the color of grass (where the game finds a lot of its origins), the second was it was simply cheaper to make in that color.

Recent studies show that 'green' is actually easier on the eye which allows you to play longer without eye strain, and some claim it helps with your depth of vision (needed for long shots).

In the end, in a modern sense at least, it is more preference than anything.

The most recent development by DuPont shows that a light blue color gives the best vision of the balls on the table. Simonis brought this to market with their Tournament Blue color cloth. Historically, Green was the only color until mills started adding colors to meet consumer demand. Some cloth manufacturers now offer 20 or more cloth colors.
