Because UK was already taken by the University of Kentucky, (UK). So Kansas chose, KU meaning Kansas University.

The above answer is not correct. The university located in Lawrence, Kansas, called itself KU long before there was a school called the University of Kentucky. Although both schools were established in 1865, the Kentucky school was originally called the Agricultural and Mechanical College of Kentucky. It did not become the University of Kentucky until 1916. KU's famous Rock Chalk Chant, "Rock Chalk Jayhawk, KU," was written in 1886. Old pictures from the 1890's show KU football teams with uniforms bearing the imprint: "KU."
