The give of a surface is dependent on how willing the molecules of the material are willing to move when force is applied. If they are tightly packed together they are less willing to move than if they were loosely packed. There is also an idea of internal elasticity of a molecule. If the molecules have a high internal elasticity they act like a spring that is very stiff, if it is a low internal elasticity it will act like a weak spring.
