I'm assuming here that you're talking about a cruiser style bicycle. First off a bicycle doesn't anywhere, at any speed without a rider. And a strong rider can do crazy things even on the most inappropriate bicycle. Likewise a weak rider will struggle even with the best bike. With that said, cruiser bikes aren't built for speed and efficiency. Expect 10-15 MPH on the flat with reasonable effort.
There's really not much point in that, unless you simultaneously replace the rear wheel with a single speed wheel and add some chain guides. But if you insist: unhook shifter cable by the shifter and pull it out. Pull grip(s) off handlebar. Loosen Allen screw on underside of shifter clamp. Pull shifter off.
You can. but only with difficulty. As a cruiser has a rather poor riding position and is usually quite heavy as well you're probably better off looking for a bike with better riding characteristics in the first place.

When first learning to ride a bicycle, a single speed drive with brakes where you peddle backwards reduces the complexity of what you must practice. Later a 3 speed can be used and eventually a multispeed derailleur shifter can be learned. But you need to start with the simple things first.
That depends on what trans it has. If the shifter is electronic then yes. If the shifter is not electronic then it is a three speed.
