A school gym floor works nicely as long as it has carpet. Also if your doing flips and trips you may want pads.
Any floor, it shouldn't make a difference. I've trained on wooden floors, tatami mats, carpet on concrete, tile on concrete, plastic tiled gym floors, grass and sand. While learning to do falls and rolls, it is a good idea to practice on pads or mats, but once you have it down, you should be able to do it anywhere. I once did a full roll while walking down the hall at work, no one saw it, but they heard the slap of my feet as I came back up.
