The main factor in determining what ceiling height you'll need is the standard / level of competition being played. Minimum 3 metres for recreational play and a minimum 5 metres for professional play.

The free playing space shall measure a minimum of 7 m in height from the playing surface. For FIVB World and Official Competitions, the free playing space shall measure a minimum of 12.5 m in height from the playing surface.
The standard net height for beach volleyball is the same as the height for indoor volleyball. A women's net height is 7 feet, 4 1/8 inches while a men's and co-ed net is 7 feet, 11 5/8 inches. Net height varies depending on age accordingly.
