The G stands for Green Bay. And the Green Bay Packers are owned by the city.
Greatness! 1961 George Brashier, eqiupment manager, created it. Packers had logos before but the first and only one on the helmet is the G for greatness. It's a trademarked "G" and the universities that use it have permission from the Packers.

It seems so obvious that it stands for "Green Bay" that I started wondering myself if there might not be more to it. It turns out that the story is that the person who designed the logo intended for it to represent "Greatness."Somewhat countering this notion is the fact that at one time the team occasionally used an alternative logo consisting of the letters G and B superimposed; both were somewhat "stretched"... the G horizontally, just like it is in the current official logo, and the B vertically.
