It stands for "Greatness"
The G on the Packers helmet stands for greatness. In 1961 George Brashier, the packers eqiupment manager, created it.
If you are referring to the Green Bay Packers helmet, then it stands for Green Bay.

The following web site: www.packersuniform.com states that the now iconic "G" helmet logo was first used by the Packers in 1961 (designed by equipment manager Dad Braiser). The University of Georgia began using the "G" helmet logo in 1964. Grambling University (Louisiana) began using the "G" helmet logo in the early 1980's

They have a trademark for that particular, stylized G. The letter G is still free for everyone to use.

Apparently, equipment manager George "Dad" Brashier thought up and designed the logo in 1961.And greatness is what legendary Coach Vince Lombardi brought to the Green Bay Packers. Lombardi coached the Pack to NFL championships in '61, '62 and '65, as well as victories in the first two Super Bowls.Of course, the Packers also won NFL titles in 1929, 1930, 1931, 1936, 1939 and 1944. And Super Bowl XXXI in 1996. In case you're counting, that equals 12 championships.
