If you have a .600 shaft and a .580 grip it is very very difficult to get the grip on, so you should make sure you know the size of the shaft before you get the grip.

There is a device that allows you to "blow off" a golf grip using compressed air. GolfSmith sold this at one time, but I'm not sure if they still do. Some golf shops may have these, but most will simply cut off the old grip since they don't cost that much.
