Stealths are a high end softball bat. There are many version of the Stealth. They are expensive bats so when looking to buy one make sure you get one that is the right length and weight for you.

the better bat would definitely be the easton stealth. the demarini cf4 is a good bat too but if the bat is hit on the wrong part of the bat, the ball will not go like it does on the easton. the stealth has a massive sweet spot/barrel and also has a lot more pop than the demarini.
Ka Bam! Composite bats are great! They make the ball jump off the bat and go far...
I don't know what the "legal" umpire answer would be, but I do know that fastpitch bats are made lighter so they can be swung quicker. It seems like you would want to use a slowpitch bat in slowpitch for the extra power you would get from the extra weight of the bat. There is no rule against it as long as the bat is an approved bat in the league you are playing in, i.e. ASA, USSSA, ISA, NSA.
