A Caballerial is a skateboarding move, a 360-degree ollie while riding fakie.
Move the right stick down, then move it up quickly. You can also hold the stick in the down position if you want a bigger ollie.
A flip trick out normally refers to the last trick in a combo. For example, if you are doing a railslide or grind, first you grind, then instead of simply finishing the grind and landing, you do a kickflip at the end of your grind and then land. So the sequence would be something like "Ollie to 5-0 grind to heelflip out" (out usually meaning the last trick done before landing).
You can look at a complete FAQ for this game including how to grind at: http://www.gamefaqs.com/console/psx/file/563086/21056 On the PlayStation 2 version, you have to get in the air by jumping (x button) and then press the triangle button. Once grinding, you will have to balance on the rail with the arrow key pad.
Skateboarders do not defy gravity. They use typically an ollie to do aerial tricks. An ollie is a move in which the skateboarder "pops" the tail (to push the board in the air) and slides their front foot forward (to balance the board). This is probably the most useful trick in skateboarding. From an ollie you can grind or grab or flick the board.

RODNEY MULLEN IS A SKATE GOD!!! He has made most all of the basic tricks in skateboarding. lets name a couple, 540 shov-it, helipop, flatground ollie, kickflip, heelflip, impossible, 360 flip, 360 pressure flip, half cab kickflip, one footed ollie, backside 180 kickflip, ollie nosebone, ollie fingerflip, ollie airwalk, FS shov-it heelflip, switch 360 flip, helipop heelflip, kickflip underflip, casperslide, truckstand, drakslide, the list goes on and on. If you have little to no experience riding, or still are learning to ollie, then a 360 pop shuv can absolutely be difficult. However, I rarely see a true 360 pop shuv, most ppl just shuv without the pop.
