This question cannot be answered in a single, simple way. The person who asked it has no clue as to the complexity of the Latin language. The principal parts of the verb "to enjoy" are:gaudeo, gaudes, gavisus sum, gaudere. It is a semideponent verb. If you want to say in the present indicative tense "I enjoy" or "I am enjoying" it would be "gaudeo." "You, singular, enjoy (now)" would be "gaudes". "He, she, it enjoys (now)", it would be "gaudet" and so on... If you switch to the imperative mode in the present, there are two renditions: "enjoy," referring to one person, it would be "gaude" if two or more, it would be "gaudete." As you can see one cannot get an English-Latin dictionary and start translating. It would be simply ludicrous and Cicero would be rolling in his grave for a long time.

Until quite late in History - until the Reformation in fact - all education was in the hands of the Church. The church's language was Latin, and Latin would be spoken in schools exclusively. So any educated person - almost, anybody who could write - would have a thorough grounding in that language. If a new word had to be invented, it was natural to them to adapt it from Latin roots.
