It stands for Formula One. There are other types of racing with names like F3000 and F3. The formula means the set of strict rules the cars have to abide, and the numbers correspond to the different formulas.
"Grand Prix" is a somewhat generic term applied to certain auto races (and, for that matter, tennis matches and other sports), while F-1 (Formula 1) refers to cars built to the specific rules to compete in the World Driving Championship. Every race for the World Championship is a grand prix and F-1 cars compete in those races, but not every grand prix is a world championship race.

Each team is allowed to field two race cars per race. Every year the formula one administration decides the number of teams that are allowed to compete every season. So, based on the number of teams, the number of cars differs. For ex: in the 2013 season, there are a total of 11 teams which means 22 cars will be allowed to be at the starting grid of each f1 grand prix this year.
