Different sails work differently.

Sailboats tend to catch wind and cause the boat to be pushed by this action. The more square footage of sail you have the more power you are sailing with.

Ice boats use the sail as a wind edge. They do better when going into a wind. The wind passes over the sail on both sides. One side has more pressure then the other side. As a result, the ice boat is capable of moving several times faster then the wind. Speeds of as much as 100 mph have been recorded.
