you twist your ankles and you turn. then stop and do again the other way.

You never twist your ankles while skiing. If you are capable of it your boots aren't fitting you properly. Your ankles shouldn't move. You do roll your KNEES however. That is carving which is fairly advanced skiing. For the begging you will turn by shifting weight from one foot to the other. I'm assuming you've never skied before because you needed to ask this question. If you want to learn to ski please get a lesson. Skiing Switch is skiing Backwards (or 'fakie'), with twin-tip skis.

To do this, you start slowly, on a beginner slope. You can start of by doing switch 'Pizza' (or snow-plow), by pointing the back tips of your skis together and applying pressure to slow down.

Eventually you will become more comfortable going switch, and you can start putting some turns in. This involves going switch pizza (slowly), looking to a specific side with your head and upper body, and allowing your skis to come sideways. Once you are sideways, turn your upper body uphill again, and go back into switch pizza. Now look the other way, and let your body turn that way. Congratulations.

Once you have the hang of this, you can start going a little faster, and keeping your skis together. You will automatically start carving switch, with enough practice. This still basically involves looking the way you want to turn (moving your upper body), and letting your skis carve that way.

To ski switch in powder you will need a lot of practice, and a lot of leaning forward, or some skis with great rocker.
