If an offensive lineman moves, a false start penalty will be called. It is not fair to the defense if the lineman moves before the snap because it would give the offense a huge advantage.
The ball is initially held by one of the linebackers in a spread option offense before being passed off to the quarterback at the snap. The purpose of the spread offense is to open up both passing and running options as you spread your options out across the field.
They do not only teach self defense they teach offense also. Like any karate class or defense class they would rather be teaching defense methods instead of offense methods.
