You can watch his/her eyes to see where they are looking but often they look the opposite way to deceive the goalkeeper.

The best bet is probably to guess, either stay still for a shot down the middle or dive left or right,theres a 1/3 chance you will go the right way, even then the ball might be out of reach.

With very fast reactions and practice, you could judge where the ball will go by looking at the feet of the striker before or as he hits the ball.
