Hopefully, they act professionally, athletically, and kind-but-stern. While some referees have a predisposition to certain behaviors, the temperature of the game (how aggressive it is, etc) is often the biggest factor. A friendly, respectable game will attract a kind, lenient referee. A hard-fought dirty game will arouse the ire of most any referee.
Off the field, soccer referees generally act like any member of the rest of the population.
