Now, they are typically from cows, but they use to come from Ox, which are nothing more then castrated bulls. Ox-Tail is nothing more then the tail of a beef animal.

You don't. Docking is illegal (at least where I live) and only ever done for fashion. The only decent (or legal) reason is if there is a SPECIFIC danger that the dog could be injured, and this is very unlikely.
