Without using a radar you need to know the distance you are shooting and the time it takes the puck to travel. I film myself shooting pucks 10 meters against a wall. I then playback to measure the time between the sound of the stick hitting the puck and the sound of the puck hitting the wall. This is usually about .4 seconds. If the puck has traveled 10m in .4 seconds then it would travel 90km per hour or around 56mph.
