To do so you setup your turntable so that the speaker output goes into your computer aux input and you record it with Audicity (that's what I used when I did mine) and then convert the output from WAV to mp3.

You don't. An mp3 is an audio codec. If you want to put one on an MP3 player then you have to have a link between your computer and the player and your player has to have video playback capabilities.
