In regular volleyball it usually goes to 25 and you have to win by 2. In beach volleyball the first 2 games in a match go to 21 and the third if necessary goes to 15.
From sets 1-4 it's 25 points, but the 5th set usually caps at 15.
In a game there is a minimum of 50 points, and a maximum of 65 points. You can play up to 3 sets, with a minimum of 2. The first 2 being worth 25 each, and the tiebraker (or 3rd set) worth 15 points. In college and other leagues there are 5 sets. The fist 4 are to 25 points and then if needed the 5th set goes to 15.

Regardless the score, the set can only be won if one of the teams scores two points more than the other in a set. There are no restrictions regarding the maximum lenght or the highest score. So, theoretically, the result can be even up to 100:102 etc.
In each set, you play to 25, win by two. If you get to 29-29, the next point decides who wins that set. Winning 2/3 or 3/5 sets wins the match depending on what league you're playing in.
