Beet tops can be eaten raw in a salad, or cooked as greens.

No Frills Cooked Beet Greens

Ingredients:

Beet Greens (cut off the heavy stems)
Butter
Salt
Pepper


Procedure:

  • Wash beet greens in a sink filled with cold water.
  • Remove to a colander and drain. No need to worry about draining thoroughly - you need the greens to be wet for cooking.
  • Place beet greens in a large pot. Do not add additional water. The wet leaves will provide enough moisture.
  • Cover and cook over medium heat until greens are wilted, about 3 to 5 minutes. Do not over-cook.
  • Serve with butter, salt and pepper.

They favor fertile soil that does not water-log, drains like loam, and has no below-ground clumps or obstructions. They will be finicky about cooler temperatures since they need them in order to develop properly.
