'Snow hardener' does exactly what it says: It hardens snow. Well really, it makes snow more compact. When you are skiing, you dont want soft snow otherwise that will stop your skis by swamping them, and causing lots of friction. What you want is compact snow, so that your skis can go on top of the snow rather than sink in. Snow hardener is just a catalyst for making the snow more compact so that people skiing can ski on the slopes.
I believe it has something to do with the large surface area resulting in lower pressure on the snow (or whatever your skiing on, if not snow) so you don't fall into the snow.

If your ski shoes are inserted into skis, then you have the whole surface area of the ski supporting your weight. The larger the surface area that is pressing down on the snow, the less pressure there is per square inch. It takes a certain amount of pressure per square inch to overcome the cohesion of the snow.
The larger the surface area the more pressure can be spread out, therefore it is less likely to fall through the snow. As pressure = f / a.
snowboards are differnet from skis because skis have 2 skis and a snowboard only has one thing that you stand on.
You can snow ski or water ski, but you are always ON the same thing- skis!
