Oxygen is heavily used to make ATP for cellular respiration in the electron transport chain. ATP is used for muscle contraction. There is something called the "oxygen debt" that must be "repaid" after heavy exercise or a race. They body tries to do this with deep and frequent breathing.
Energy comes from respiration. Normally we combine glucose with oxygen to produce carbon dioxide and water and release energy. During heavy exercise we can't absorb enough oxygen to keep up with our energy needs, so we also employ a process called anaerobic respiration, where glucose is converted to lactic acid to release energy without the need for oxygen. This gives us a temporary energy boost, but lactic acid is toxic so we need to get rid of it. We do this by combining it with oxygen to convert it to safer substances. This means that we need to keep breathing heavily until we have got rid of all the lactic acid.
