For some history do a search for Ballparks Organ Music and Chicago. (Links are not accepted on Answers) Chicago was also the home of The Hammond Organ Company, and there may have been some promotional connection between the Cubs and the Hammond company. The organs were built beginning in 1935, and it was important to the company's marketing that their instruments could be used for venues in addition to churches. (No documentation of this, but I know a few details about Hammonds)

As a church musician, I will attempt a basic response to your question. Many pieces of organ music are based on hymn tunes (many not in current use) and are often played to help teach a new melody to the congregation, get them ready to sing during the service, recall the meaning of text to support what message is being preached. I use music to set the mood/tone of the service. Postlude music, played at the end of a service helps carry the message and the congregation home. Sometimes there is, unfortunately, no meaning and it is used solely to cover the silence.
