They play on Thanksgiving because it was a tradition when the idea started. The Coyboys and Lions would always be the one's player and will always be at home. Also, if it changed fans would be disappointed in the lack of NFL tradition.

Its a tradition started by the first Detroit Lions owner G.A. Richardson who in an attempt to boost attendence to Lions games set up the first Thanksgiving day game in 1934. The Lions played the undefeated Chicago Bears to a very close loss 16-19 but so many people listened on the radio and full crowd at the game made history as a classic was born and the Lions have played Thanksgiving day ever since.

In the mid-1960s, the National Football League wanted a late afternoon game to follow the Detroit Lions' traditional Thanksgiving Day contest. When no other team showed interest, Dallas Cowboys president and general manager Tex Schramm jumped at the chance because he realized the game would provide his young franchise a national stage and audience.
Schramm's instincts have proved to be correct. Since 1966, the Cowboys have played 50 games on Thanksgiving, and the annually televised contest has become as customary as a turkey dinner with trimmings.
In recent years, the NFL has added a third televised Thanksgiving contest, which is played in prime time after the Dallas game.

Because when the pilgrims first arrived at the shores of New England the realized there was no football team so they created the Patriots and football is played on thanksgiving ever since then and we continue to celebrate this tradition.
