The starting third baseman for the Yankees prior to getting A-Rod was Aaron Boone. He was cut on February 27, 2004 after suffering a knee injury while playing a pick-up Basketball game.
There have been several backup third basemen since 2004, but the starting job has always belonged to A-Rod.
