It was used to entertain important guests from other countries, likely to be kings. They would also hold banquets or balls for important lords and barons in the medival times. It also would act as a vacation for kings, if they wanted. It was also a place were you could make laws and regulations. Hope that helped.
People entertained themselves in many ways in medieval castles, including hosting events such as feasts to celebrate special occasions, but also on regular occasions with games, music, dancing, drinking, and sometimes adults-only activities (though that was usually done in private, not like an orgy). One of the most well-known games was Chess, which was popular throughout Europe after the time of the Crusades. Music was performed by minstrels or singers who were paid by the noble lord for their talents, and sometimes their music accompanied dancing, but dancing back then was very simplistic, tame and boring by today's standards. Despite what is depicted in some movies and TV shows about the middle ages, wild or sexually suggestive dancing was practically unheard of in medieval times. Most any castle had stores of ale and wine in the donjon below the keep, because the water in medieval Europe was not always safe to drink, and any occasion was a good occasion for drinking. A few noble lords retained a fool (you might call him a jester) whose job was to provide humor and levity in the court, though they rarely told 'jokes' like we would think of today.

There are many activities that can be done in a castle. They include touring, Photography, decorating, and renovation. Many castles have been transformed into state parks and such.
