Volleyball does not have a quarterback position.
It stands for the Defensive Specialist who is often times the middle back. They almost always play back row.
The "op" is short for "opposite". Most of the time, it's seen as "Opp", or "RS", which is short for "Right Side" because opposite and right side is the same position.

Every position in volleyball does serve. ---- All players rotate a clockwise direction therefore every player will ultimately have to serve
If you're referring to it when next to scores it means loss, but if it is next to a players name, it means libero. The libero is a defensive position that can go on and off the court without notifying officials, but it cannot attack; they're sole job is to keep the ball from hitting the ground.
