It's really up to you. You don't want to pick one too big because it will drive the fish away. You want one that will just hold the line where you want it. If you are just fishing on a lake or still water then you would probably be fine with a 1 or 2 ounce sinker.

No. Trust me - just throw fastballs and work on developing arm strength until you're physically mature. There's plenty of time to develop other pitches once you are, and you will save your arm a LOT of unnecessary wear and tear.
