Although some companies try to "enrich" it by adding a few vitamins that are milled away, those nutrients are sometimes cooked away or poured off if the rice is not allowed to absorb all the cooking liquid. Once the fibrous bran is milled away, the fiber (and other nutrients it contains) cannot be added back. Therefore the term "enriched" should be synonymous with "processed"-if not "depleted".
