A caddie usually walks the course prior to the tournament and spots all the dangers as well as the good spots and they make a note of them. They also note the breaks on the greens. In the tournament they carry the bag, hand the player the clubs and put them back in the bag. They clean the ball when permitted, to remove grass and dirt. Some players get their caddy to read their putts as well as line them up on tee shots and approach shots. Occasionally they tend the pin on longer putts to indicate where their player is putting too.

Depends how good they are. I would at least expect them to carry my bag, keep the ball and clubs clean, rake bunkers, tend the pin and be quiet. But if they are a very good caddy they will help you with yardages, indicate danger, suggest club selection and help read putts.
