UCI has a great medical program.
Many colleges offer a degree as a medical assistant, most prevalent are community colleges. Therefore, you will have to find a school that offers this program and that would be your major. I would urge you to take this program through a college and not some private institution.
To find a school that has a good program for both, it'd have to be pretty large. Some good examples are NYU, Duke University, and Northwestern University. See the links below for more information on these schools and their programs.
There are many excellent colleges in Minnesota. Some of the best include Carleton college, University of Minnesota, Hamline college and Mayo medical school.
Most four year universities and colleges will have some sort of pre med program. The pre med program is not a major, but advising to help you decide that medical school is the right decision for you and then help you get in and meet the requirements for medical school. Of you want to find a good premed program then look at the percentage of kids that applied to med school and got in.

Your best option for seeking a good local medical assistant program would be through the American Association of Medical Assistants, or through a local or internet based vocational school.
In general and depending where the program was taken, a diploma in medical assisting would have general education requirements within the program such as, English, possibly some math, anatomy and physiology, possibly some chemistry etc. Typically you would fine this in programs offered by colleges, especially community colleges. The certificate would be strictly focused on the career oriented courses. However, if you plan on taking this program, you would be prudent to consider taking it through a college, and not through some private institution, where the tuition would be much more, and possibly not as recognized by employers.
Some medical assistants are trained on the job, but many complete 1-year or 2-year programs. Your best choice would be to complete a medical assistant program through a college. Typically, this program of study is offered by many community colleges.
