In volleyball, there is a setter, middle blocker, opposite hitter and outside hitter. The setter is in the serving position and will be coming off the back row set. The middle is going to make their approach to the middle as usual. With the outside hitter and the opposite being flip flopped, they will hit once and then will switch back to normal after the ball goes over the net. There are different rotations actually. Just like in Basketball where it also depends on the offensive and defensive strategies.

You rotate in volley ball after the other team has lost the ball (you would get a point) and you are serving again. So pretty much anytime before you serve the ball again.

You rotate in volleyball when the other team loses their service chance. When that happens the entire team rotates and the next person serves.
