It depends on the organization tracking the information. USBC would have tracking of sanctioned 300 games Bowling bowled during sanctioned league or tournament play. CTF would have for Canadian Tenpin Federation. TNBA would have for their association. Etc.

In all games that I am aware: tenpin, duckpin, and candle stick, a perfect score is 300. The only exceptiont that I am aware of is five pin bowling. The perfect score is 450. You get 15 pins for a strike.

The record for most 299 games in a career according to the USBC records sheet is 40 by Warren Tam Wasson from Garland, Texas. At his passing in April, 2014, Tam's total number of 299 games stood at 41, and was still the record.
In typical league bowling, a series is three games. Bowling an 800 series is considered to be an achievement about four times more difficult than bowling a 300 (perfect) game.
