There is no definitive test. Anytest that measures how quickly someone can react to a stimulus, and accurately execute a prompted action with their hands should do the trick. An example: Who in a group of people is best at the arcade game "Whack-a-mole?" that person probably has the best hand-eye coordination. (or, at least the best reflexes. For a better test, chose an evaluation that requires more precision and finese than a frenzied game of whack-a-mole.)

Well one way to test co-ordination is you can throw a tennis ball against a wall with one hand then catch it with the other. Time yourself for 30 seconds:

30++ = Excellent

20-30 = Good

10-20 = Average

0-10 = Not so good..
