You would 'half-halt' down the outside rein constantly (as though you had a sponge or something similar in your hand, squeeze and release, swueeze and release...) whist keeping your legs on to stop the horse from breaking his canter.

You dont nessacerailly train a horse to stop going fast. Its all a matter of rudeness. You might need to consider buying a stronger bit. Or try getting your saddle fitted. You could also try having some dressage lessons, this will loosen up the horses movement and make the paces flow a bit more.

Stopping a horse is the same in most every gait. You should sit deeply in the saddle, close your lower leg around the girth and give gentle but firm squeezes on the reins to let the horse to know that you wish to slow down or stop.

To slow your horse down lean back into your seat bones and squeeze your fingers. When you lean back though make sure your legs don't go forward that will lose your balance.
