No, the Vancouver Canucks have not won the Stanley Cup.
This is a disputed question. The first professional hockey team to compete from Vancouver were the Vancouver Millionaires, later called the Maroons. The team began in 1911 and soon won a Stanley cup, beating the Senators for it in 1915. The team folded in 1926 and ceased to exist.

The Vancouver Canucks joined the NHL in 1970, having existed since 1945, and have never won a cup. Some wish to credit the Canucks with the Stanley Cup won by the Millionaires in 1915, however, there is no substantial link between the two clubs other than the sport of hockey and their home town, and so officially the Canucks are not given recognition of the win nor does a Stanley Cup banner commemorating the event hang in their arena.

So strictly speaking, the team known as the " Vancouver Canucks" did win the big prize (or cup) -- but not as a NHL team.
